We have been artisan sheep cheese makers for over 80 years, continuing a tradition initiated by previous generations. Today, we continue to produce our cheeses using traditional methods, incorporating advancements in machinery and the highest guarantees of quality and hygiene, to offer a product true to its origin and to the cheese-making history of Castilla-La Mancha, especially that of the town of Herencia.

Its rich pastures and the selection of native sheep allow for the production of premium quality milk, an essential base for our cheeses, one of Castilla-La Mancha’s most emblematic and internationally recognized products.

Artisan Cheeses
Sheep cheese has appeared in Spanish history and literature since ancient times, with well-known references such as El Quijote, where Cervantes links it to Castilla-La Mancha. During the 19th and early 20th centuries, various authors and gastronomic and technical treatises highlighted sheep cheese as one of the main Spanish cheeses, associating it with artisan tradition and village cheese.
Our artisan sheep cheese is part of this long heritage, being a typical product of Castilla-La Mancha made with sheep’s milk and a deep cheese-making tradition. Its importance is reflected in various specialized works, which consolidate sheep cheese as an emblematic food of Spanish gastronomy.
